Gunter Pauli was born in Antwerp, Belgium, in March 1956. He was always passionate about gastronomy, cuisine and hospitality. After extensive studies, starting with the basic kitchen apprentiship, followed by the famous Hotel School Lausanne, he gained experience and knowledge, working his way up in many renowned places such as The Dorchester, London, The Peninsula Hong Kong.

After spending five intensive and interesting years in Hong Kong, he returned to Switzerland in 1975 to take over the family affair in Schaffhausen.

It was the starting time of the European Nouvelle Cuisine and it was André who in 1978 introduced as the first chef, Asian influences, combining Chinese cooking methods and flavours with the European Cuisine.

What is today common practice, was in those years a small revolution. It was a start to a new and borderless way of thinking in terms of food and cooking.

André Jaeger collected many awards and recognitions, was named Chef of the year more than once and his cuisine was rated with 19 Gault Millau points for 20 consecutive years.

Fluent in English, French, Italian and German of course, he loved to travel, discover new places and learn more about other cultures. Hence he was, besides his business and daily responsibilities, for many years active in associations such as Relais & Chateaux, Traditions & Qualité and last but not least, for over 20 years, president of Les Grandes Tables de Suisse.

Today he enjoys his retirement and is ever so often seen coaching, or cooking in various places, sharing his acquired experiences during many years in a wonderful trade.
